Meal Planning 6.19.12

With all the changes taking place with my work schedule I’m finding myself pressed for time in the kitchen during the week, couple that with a budding toddler who needs to be just an inch behind me at every turn and I feel like our dinners are suffering. I’ve turned to easy to assemble after work or prep the night before meals. Here’s what is on the meal for this week:
Monday: Chicken Caesar Flatbreads; super simple meal of chopped romaine, diced or pulled rotisserie chicken, Caesar dressing, parmesan cheese, flatbread
Tuesday: Loaded Baked Sweet Potatoes; I’ll be back with a recipe for these later in the week.
Wednesday: Ham Steak on the grill with mac n cheese; I’m going to a social media thing & baseball game so Tim & Sophia are on their own for dinner; I needed to make it fast, easy, and the least messiest option possible.
Thursday: Southwest Steak with Cornbread Dressing; Pinterest for the win!

Friday: Garlic & Herb Cheese & Chicken Pizza; I’ll also be back with a recipe for this next week.

With the heat wave rolling in, my crock pot and grill will be working hardcore. Lol. I whipped up about a dozen veggie burgers about two weeks ago. They’re sitting in the freezer so I can just pull them out whenever. Much healthier than running out for fast food.
I’ve also have become a farmer’s market addict, so lots of salads have been happening.
